A better knowledge of cured meats is good for the palate and also for your health
When we sit down to eat, or we want a snack, our thoughts often turn to something tasty and flavoursome. Such as cured meats or cheeses. And, very often, we try to avoid eating them because we're convinced that they're not good for our health, that they're fattening, or again, that they're not easily digestible.
This is a myth to be exploded: and so we devote this chapter to explaining how we can rediscover the pleasure of enjoying them without prejudice or hesitation. We want to revalue a wholesome and happy combination: health and cured meats. And all on a sound scientific basis, with the collaboration of the National Research Institute for Food and Nutrition.
