Sandwiches and Focacce
For 1 person1 durum wheat bread roll
2 slices of pancetta
Roman pecorino (sheep cheese) shavings
Black pepper to be freshly ground at serving
Extra virgin olive oil
Batter the eggs in a soup plate. Add a sprinkle of salt and pepper as well as two tablespoons of water and stir until all is well mixed together. Take a non-stick pan, coat it with a little olive oil and put it on the stove. Once hot, turn heat down to minimum and pour the egg mix into the pan. Stir with a wooden spoon. Cook for some minutes and keep stirring, taking care that the egg mix remains creamy and soft. In the same pan or directly on a grill pan, roast the bacon until crunchy, let rinse excessive fat and keep it hot. In the meantime heat the bread roll and cut the pecorino cheese in shavings. Stuff the bread roll with egg mix, pecorino, pancetta and sprinkle with black pepper.
