Salami Salad

For 1 person

1 Belgian endive
70 gr fresh white mushrooms
50 gr of salame Fiorucci in one single piece Leafs of radicchio salad
Leafs of radicchio salad
1 table spoon of pine nuts
1 table spoon of raisins
Lemon juice
Extra virgin olive oil, salt
Black pepper to be freshly ground at serving

Soak the raisins in lukewarm water. Clean the mushrooms and cut off the earthy stems. Cut in small pieces and sprinkle widely with lemon juice. Wash Belgian endive and radicchio and cut in pieces as you like. Toast the pine nuts in a non-stick pan and cut the SALAMI in dices or strips. Drain excessive lemon juice from the mushrooms and add Belgian endive and radicchio, mix with care. Dress with olive oil, salt and pepper. Now add salami cubes, drained raisins and the toasted pine kernels. Add a little more olive oil and some lemon juice, just after your fancy.
